Recycle green tea leave

I have Green Tea leave that is expired for 3-years now. Like always, I never like to waste, thus I chance upon this website that gives me more ideas to my expired green tea.

When you are done using the tea leaves to make a cup of tea, put the used leaves in a strainer and drain out all the water. Next lay them out on unprinted paper and put them in the sunlight for 2 days. You should turn them over after a day. What you will end up with is used and dried tea leaves. These leaves are very useful. Below are a few things you can do with these incredible leaves.

Carpet Cleaning

With your hands, crush the dried leaves into little pieces and then sprinkle them on your carpet. These crushed leaves will absorb odors and fight bacteria. After several minutes vacuum them up.

Gardening

Green tea leaves can also be sprinkled near plant roots and buried with soil as a natural fertilizer. In fact, a few companies sell dried tea leaves as a fertilizer. Save your money by making your own green tea fertilizer. The tea leaves will give your plants a nitrogen boost which will help them grow.

Deodorize

Crushed tea leaves are great for deodorizing practically anything. You can use them on almost any bad smelling area in your home such as where your pets lay or sleep. You can even put the crushed tea leaves in a bowel and put it in your refrigerator uncovered for a few days to clear out any bad smells. If you want to get a strong smell off your hands such as the smell of onions or garlic, rub your hands with the crushed tea leaves.

Make a Pillow

For many people, the aroma that comes from green tea helps them sleep at night. The idea then is to make a pillow out of your used tea leaves. The tea pillow will give off a slight scent that will help you sleep at night. Just remember to open up your pillow once a week to let it air out because the dried tea leaves will absorb the moisture that comes from your breath.

Skin Care

Green tea leaves have healing properties. They are perfect for healing minor cuts and scrapes. Many drug stores now sell a green tea solution that does this. Rumor has it that green tea leaves also help with puffy eyes. Put some dried leaves into a small cotton bag and run water over it. Squeeze out the extra water and then place the bag over your closed eyes for a few minutes each day.

Deodorizing Plus Enjoying Aroma
If you have expired green tea, put some leaves in a ceramic pot or container and burn the leaves.
It not only absorb smell but extremely fragrant.

Malacca Trip 10th - 12th April 09

This would be my second trip with Kenneth to search for more malacca food.

No 7 stall at portuguese settlement. We ordered two lime juice, Sambal Kang Kong, Butter Scallop and portuguese baked fish. I think it cost us RM$50. Totally worth it.

Jonker street have some new shops since we last been to Malacca in Oct 08. This prominent corner shop at Jonker sells durain chandol. I still like the once at Yishun Central.

Breakfast at malacca Eng Seng Market @ 8 Jln Temenggong definately brings me back to the old days. Aunite sells fried banana fritters and we thought three should be enough, it cost RM0.50 each, but it became 6bananas. Auntie combine two bananas to make a fritter!

Breakfast outside out Hallmark Hotel was also great. Freshly made Chee Chong Fun with eat! Local Dim Sum for breakfast.

And on our drive back, Nyonya Kuih for lunch & next few days breakfast :). We decided to buy some from the store at Jonker street incase we can't find Baba Charlie, the well known kuih wholesaler from home. We bought very single type of kuih from him. Cost us ~ RM37

Japanese Cheesecake

Make: 2x 8" Round Cake Tin
My Remark: I followed the recipe and it worked out well except I use cake flour instead of superfine flour. I felt that it's abit rough in texture, not the same as wat you get the in restaurant, however other than that this recipe is a sure workable method.

Ingredients

126g fine sugar
6 eggs, separated
1/4tsp cream of tartar
50g butter
250g cream cheese
100ml fresh milk
2 tbsp (28g) lemon juice
grated lemon zest (optional); about 1tsp
60g cake flour/ superfine flour
20g cornflour
1/4tsp salt

Method
1) Melt cream cheese, butter and milk over a double-boiler. Cool the mixture.

2) Sift the cream cheese to avoid lumps and to achieve smooth texture.

3) Add in lemon juice and egg yolks using wire whisk, mix well.

4) Add in flour and corn flour into the cream cheese mixture, a little at a time, until well mixed.

5) In a separate bowl, beat the egg white till foamy, then slowly add in cream of tartar.

6) When egg white mixture reaches soft peak, add in sugar slowly and continue to beat until you reach stiff peak.

7) Take 1/4 egg white mixture and add into cream cheese mixture, mix well.

8) Fold the remaining egg white mixture into the cream cheese mixture, do not overmix.

9) Pour mixture in 2x8' cake tin and lined the bottom and side with baking paper.

10) Bake at 160 deg C for 1 hour 20 min in water bath.

When the telemarketer called, I agreed to try the trail when she agreed for a professional shoot. I've nothing to loose. However, when I arrive, the "Ang Mo" said professional shoot are chargeable. The clothes are also limited to cultural costume and elegant dress only. Thus the "professional" shoot is in my own clothes in white!

I think the "Ang Mo" is pissed by my frank opinion of their service gap. I got of easily with my two free pictures in a CD.

I found this useful household tips during today's spring cleaning. It was quite sometime ago as the printout was printed using dot matrix and on rolled paper with holes along the side for tearing.

Use a lime, cut to half and rub on your forehead
Use of soap wrapper
Use wrapper of soap as air freshener for shoe cabinets
Polished furniture has small scratches
Try rubbing shelled walnut and you'll see the scratches disappear

Banana Cake with Cream Cheese Frosting

My mum is into healthy living recently after her Chang Mai detox program. They have learn to have fruits before meal. Thus one day she bought a whole bunch of Plantain Banana for us. I have yogurt cream cheese with jam and banana for breakfast. Soon all the banana turn too ripe that I've decided to bake Banana Cake since plantain banana is best used for baking. This banana has a firm texture and a mild flavor, similar to a squash, the flesh of this banana contains less sugar but more starch than other varieties.

Too bad there's no pictures of my baking. But Kenneth and my colleagues all said it's good. I did some variation to this recipe with less sugar and adding cinnamon to it. Below is the original recipe from http://www.exclusivelyfood.com.au/2006/07/banana-cake-recipe.html

Ingredient:
125g butter, softened (if using unsalted butter, add 1/4 teaspoon salt with the flour)
330g (1 1/2 cups) sugar
280g very ripe, mashed banana
1/2 teaspoon vanilla extract
2 large eggs
100ml buttermilk
225g self-raising flour
1/2 teaspoon bicarbonate of soda

Method:
Preheat oven to 160 degrees Celsius fan-forced. If you don't have a fan-forced oven, preheat the oven to 180 degrees Celsius. Grease and line a 22cm diameter springform pan.

Place butter, sugar, banana, vanilla and eggs in a food processor.

Process for about 2 minutes. Scrape down sides of processor. Add buttermilk and pulse to combine.

Sift flour, salt (if using) and bicarbonate of soda together into a large bowl. Add flour mixture to food processor and process until just combined.

Pour batter into prepared tin.

Bake for about 50-60 minutes, or until a skewer or knife inserted in the centre of the cake comes out clean.

Leave cake to cool on a wire rack.

Spread cooled cake with cream cheese icing. Store cake in an airtight container in the refrigerator.

Cream Cheese Icing
90g cream cheese, softened
45g butter, softened
210g (1 2/3 cups) icing sugar
1 1/2 teaspoons lemon juice

Beat cream cheese and butter with an electric mixer until creamy. Add sifted icing sugar and beat until smooth. Add lemon juice and beat to combine. Spread icing over top and sides of cooled cake.

Wats next after yogurt? I decide to search the internet for making cream cheese. EASY! Just place the yogurt into a cloth over a strainer and leave in in the fridge overnight to drain off the liquid. Walla! You have cream cheese!

However, the taste is like yogurt and only the texture is like cream cheese. Mmhhh.. Anyone can share with me how to make a good homemade cream cheese?

Baking Soda, Cream Of Tartar, Baking Powder

Baking Soda, well known as bicarbonate soda. It is a alkaline compound , usually sodium bicarbonate. It neutralise acids in dough or batter. This encourage batter to rise in the oven. The bi-products of this reaction are water and carbon dioxide. It is usually used along with baking powder in cakes with acidic ingredient like sour cream, honey, molasses, fruit and buttermilk. It also encourage browning.

Cream of Tartar is an acidic salt, potassium bitartrate. It's role is to stabilise beaten egg white and improve the texture of egg-foam cakes.

Baking Powder has a mixture of chemicals that react to tied carbon dioxide when liquid is introduced. It consist of an acid salt, an alkali, and a filler, usually cornstarch, to absorb moisture and prevent the compounds from reacting in the jar.

I've always thought making yogurt is difficult. Seen in the shops selling yogurt powder and books that comes along teaching you how to make a successful yogurt. I tell myself what a hassle, just buy from the supermarket. They're even cheaper!

Than one day when I chat with a Indian colleague, she told me that their family always made home yogurt for dinner and drinks. It started me thinking of making it myself. And there goes the process of using full cream powder to mix with boiling water to make liquid milk and than cooling it to the right temperature before adding the yogurt into the mixture. This take at least an hour to prepare. This method is only suitable to make plain yogurt. It was successful for a few times, but as time pass I just lost the interest due to the long process.

Many years has past, now my mum has learnt from my aunt a simpler way to "make" yogurt. This time we can make banana, strewberry and chocolate yogurt. Please note, this method is only suitable in temperate countries only. Take your favourate cold milk, pour a portion that you will like to make into yogurt. Than take two teaspoon of plain yogurt and mix them well. Cover them up on tight lit and leave them at room temperature until it turns semi solid. This takes afew hours. After which you can place them into the fridge until it's ready to be eaten.

Cream Puff.. hot from oven!! ;-)

One of the cream I must try is Durain Cream

INGREDIENTS:
1 cup heavy cream
1/4 cup sugar
1 teaspoon vanilla

PREPARATION:
Whip cream until almost stiff. Add sugar and vanilla; beat until cream holds peaks. Add durain puree to cream, quantity varies according to individual liking. Serve chilled.

Bite-size Mini-cupcake

On 4th March is my MIL birthday. I made a healthy cupcake for her birthday. The chocolate cake almost fat-free and of course the cream I've choosen the 'Healthier' version with less sugar & butter.

Serve plain with icing sugar.

This Chocolate Cup Cake and vanilla frosting is our 1st try in cup cake. Kenneth and I enjoyed the process of decorating the cup cakes. Frankly it looks great, children with sweet tooth will love the frosting on top. Great for children parties.

I've not made this Pineapple Tart for many years. I use to make the pineapple filling myself, but now I took the risk by buying off shelf. It's available at supermarket during this Chinese New Year season. It turn out well. My colleagues love them.

Another pineapple cookie in the shape of pineapple shape. Thin crust with lots of pineapple jam.

Ingredient:

2 pineapples (1kg each), 1/2 ripe pineapple, skin and remove 'eye'
1 cinnamon stick, 3-4cm long
250g brown sugar
5 cloves
500g plain flour
250g butter
1 egg yolk
2 tbsps cold water
1/2 tsp salt

1 beaten egg for brushing

Parepare jam
1) Grind pineapple and drain off juice.
2) Heat cinnamon stick in a drop of hot oil, add cloves, grinded pineapple and brown sugar. Add pandan leave. Stir for 30mins till jam is golden brown.
3) Set aside to cool.

Make Dough
1) Sift flour in a mixing bowl with salt and butter.
2) Knead butter and flour to crumbly (breadcrumb) texture.
3) Add egg yolk and sprinkle water so it's pliable enough to knead into smooth dough.
4) Refrigerate for at least 4 hours.

Method
1) Heat oven to 300F
2) Roll pastry to form a long strip 1/2cm thick
3) Use a biscuit cutter to cut out rounds for tart shells, 51/2 cm in diameter
4) Flute tart rim with fingers
5) Fill tart with pineapple jam
6) Brush egg yolk on tart
7) Bake 20 mins until golden brown
8) Cool & Serve

The 4th time I've improvised my apple pie to be a Christmas pie!! The only thing missing is the 'snow'.. couldnt find sugar powder in time.. ;-)

The second time I make this Apple Pie during the last house warming. I'm sure it taste good as some has a second serving. It is definitely my most loved recipe. It has Almond taste & best of all alcohol in it. Children love it too.

Apple Pie with Almond and Whisky....
