Unless they're gourds (and some of them do indeed look to be gourds) yes, they are edible and have varying textures and sweetnesses. Fabulous roasted plain with salt or shoyu, roasted with butter and brown sugar, roasted and pureed in soups or pan fried in any of a hundred other combos.
